  3. Cut the potatoes into fries, aiming for about 1/4 inch thick.
  4. Soak the fries in a large bowl of cold water for at least 30 minutes (up to overnight for best results).

  9. Set the sauce aside in the refrigerator.

  11. Carefully add a batch of fries to the hot oil, avoiding overcrowding.
  12. Fry for 4-5 minutes until golden brown and crispy, stirring occasionally.
  13. Remove fries with a slotted spoon and drain on paper towels. Sprinkle with salt.
  14. Repeat with remaining fries.
  15. In a skillet over medium heat, add a tablespoon of vegetable oil and the diced onions.
  16. Cook, stirring occasionally, for 10-15 minutes until soft and caramelized.
  17. Remove from heat and set aside.
  18. Preheat your oven to 400°F (200°C).
  19. Layer the hot fries in a serving dish or individual plates.
  20. Sprinkle shredded cheddar and Monterey Jack cheese over the fries.
  21. Add the caramelized onions on top of the cheese.
  22. Place in the oven for 5-7 minutes until cheese is melted and bubbly.
  23. Drizzle the Animal Style sauce over the top.
  24. Optionally, add more diced onions or chopped fresh herbs for garnish.
  25. Serve immediately while hot and enjoy!
