Ingredients

Scale
  • 3 medium-sized apples (Granny Smith or Honeycrisp), peeled, cored, and diced
  • 1 tablespoon lemon juice
  • 1/4 cup granulated sugar
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup sour cream
  • 1/2 cup rolled oats
  • 1/2 cup all-purpose flour
  • 1/2 cup brown sugar, packed
  • 1/4 cup unsalted butter, melted
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the diced apples with the lemon juice.
  3. Add the granulated sugar, ground cinnamon, ground nutmeg, and flour to the apples. Toss until well coated and set aside.
  4. In a large mixing bowl, cream together the softened butter and granulated sugar using an electric mixer on medium speed until light and fluffy (about 3-4 minutes).
  5. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, alternating with the sour cream. Mix just until combined.
  7. In a medium bowl, combine the rolled oats, all-purpose flour, brown sugar, melted butter, ground cinnamon, and salt. Mix until the mixture resembles coarse crumbs.
  8. Grease a 9×13-inch baking pan with butter or non-stick spray.
  9. Pour half of the cake batter into the prepared baking pan, spreading it evenly.
  10. Spoon the apple filling over the batter, spreading it out evenly.
  11. Carefully dollop the remaining cake batter over the apple filling.
  12. Sprinkle the crisp topping evenly over the entire surface of the cake.
  13. Place the baking pan in the preheated oven and bake for 40-45 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

Notes

  • For added flavor, consider using a mix of different apple varieties.
  • Serve warm with a scoop of vanilla ice cream for an extra treat!
