In a medium bowl, combine the diced apples, granulated sugar, ground cinnamon, lemon juice, and cornstarch. Mix until the apples are well coated and set aside.
Preheat your oven to 400°F (200°C).
On a lightly floured surface, unfold the thawed puff pastry sheets. Roll out each sheet to about 1/8 inch thickness.
Cut each sheet into 4 squares (total of 8 squares).
Place one square of puff pastry on a parchment-lined baking sheet.
Make a small cut in each corner of the pastry square, about 1 inch from the edge.
Spoon about 2 tablespoons of the apple filling into the center of the square.
Fold the corners of the pastry over the filling towards the center and pinch to seal. Repeat with remaining squares.
In a small bowl, whisk together the beaten egg and milk.
Brush the egg wash over the tops of each danish.
