Bacon-Wrapped Zucchini Bites are a savory appetizer featuring fresh zucchini filled with a creamy cheese mixture and wrapped in crispy bacon. Easy to prepare and perfect for gatherings, these bites are sure to delight your guests!

Ingredients

Scale
  • 2 medium zucchinis
  • 8 slices of bacon (preferably thick-cut)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup cream cheese, softened
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Cooking spray or olive oil (for greasing the baking sheet)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the zucchinis thoroughly under cold water and pat them dry with a clean kitchen towel.
  3. Slice the zucchinis into bite-sized rounds, about 1 inch thick.
  4. Place the zucchini rounds on a clean kitchen towel or paper towels to absorb excess moisture.
  5. In a mixing bowl, combine the softened cream cheese and shredded cheddar cheese until well blended and creamy.
  6. Add garlic powder, onion powder, smoked paprika, salt, and pepper to the cheese mixture. Stir until evenly distributed.
  7. Take a zucchini round and scoop about a teaspoon of the cheese mixture onto the center.
  8. Cut a slice of bacon in half and wrap one half around the zucchini round, securing it with a toothpick if needed. Repeat for all zucchini rounds.
  9. Place the wrapped zucchini bites on a greased baking sheet, leaving space between each bite.
  10. Bake in the preheated oven for 20-25 minutes, or until the bacon is crispy and the zucchini is tender.
  11. For extra crispiness, switch the oven to broil for the last 2-3 minutes, watching closely to prevent burning.
  12. Remove from the oven and let cool for a few minutes before serving.
  13. Sprinkle with freshly chopped parsley before serving. Enjoy warm with your favorite dipping sauce!

Notes

  • For a spicier kick, consider adding cayenne pepper to the cheese mixture.
  • Substitute turkey bacon for a healthier option, though it may not crisp up as much.
  • Leftover cheese filling can be used as a spread on crackers or toast.
  • These bites are great for meal prep; store in the fridge and reheat before serving.
