Baklava Cookie Bars: A Delicious Twist on a Classic Dessert Recipe

  • 1 cup brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 2 cups walnuts, finely chopped
  • 1 cup pistachios, finely chopped
  • 1 teaspoon ground cinnamon
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 1 cup honey
  • 1/2 cup water
  • 1 teaspoon vanilla extract
  • 1 teaspoon lemon juice

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan with cooking spray or line it with parchment paper for easy removal later.
  2. In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until the mixture is light and fluffy (about 3-4 minutes using an electric mixer).
  3. Add the eggs one at a time, mixing well after each addition. Stir in the vanilla extract until fully combined.
  4. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt. Gradually add this dry mixture to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. In another bowl, combine the finely chopped walnuts and pistachios (a food processor can be used for a finer texture).
  6. Add the ground cinnamon and granulated sugar to the nut mixture, stirring until evenly distributed.
  7. Pour the melted butter over the nut mixture and stir until all the nuts are coated.
  8. Take half of the cookie dough and press it evenly into the bottom of the prepared baking pan.
  9. Spread the baklava filling evenly over the cookie base using a spatula.
  10. Crumble the remaining cookie dough over the top of the baklava filling.
  11. Gently press down on the top layer to help it adhere to the filling below.
  12. Place the baking pan in the preheated oven and bake for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.
  13. While the cookie bars are baking, prepare the honey syrup by combining honey, water, vanilla extract, and lemon juice in a small saucepan. Bring to a gentle boil, then reduce heat and simmer for about 10 minutes until slightly thickened.
  14. Once the cookie bars are done baking, remove them from the oven and immediately pour the warm honey syrup evenly over the top.
  15. Allow the bars to cool in the pan for at least 1 hour.
  16. Once cooled, use a sharp knife to cut the bars into squares or rectangles.
