  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons sesame oil

  • 1 teaspoon red pepper flakes (adjust to taste)
  • 1/4 cup peanut butter
  • 1 tablespoon lime juice
  • 1 tablespoon water (to thin the sauce)
  • 1/4 cup chopped green onions (for garnish)
  • Wooden or metal skewers (if using wooden, soak in water for 30 minutes)

Instructions

  1. Cut the chicken breasts into bite-sized pieces, about 1 to 1.5 inches.
  2. In a medium bowl, combine soy sauce, honey, sesame oil, minced garlic, grated ginger, rice vinegar, and red pepper flakes. Whisk until well blended.
  3. Add the chicken pieces to the marinade, ensuring they are well coated. Use your hands for thorough coverage.
  4. Cover the bowl with plastic wrap or transfer to a resealable plastic bag. Marinate in the refrigerator for at least 30 minutes, preferably 2 hours or overnight.
  5. In a small bowl, combine peanut butter, lime juice, and water.
  6. Whisk until smooth, adding more water if necessary to reach desired consistency.
  7. Taste and adjust lime juice or salt as needed. Add more red pepper flakes or sriracha for extra heat if desired.
  8. Thread marinated chicken pieces onto skewers, about 4-5 pieces per skewer, leaving space between each piece.
  9. Optionally, add veggies like bell peppers, onions, and zucchini, cutting them into similar-sized pieces and alternating with chicken.
  10. Preheat grill to medium-high heat or heat a grill pan over medium-high heat.
  11. Place kabobs on the grill and cook for 5-7 minutes on one side without moving.
  12. Flip kabobs and cook for another 5-7 minutes until chicken is cooked through (internal temperature of 165°F/75°C).
  13. If using a grill pan, cook in batches as needed.
  14. Remove kabobs from the grill and let rest for a few minutes.
  15. Serve kabobs on a large platter, drizzling peanut sauce over the top or serving it on the side.
  16. Garnish with chopped green onions and optional sesame seeds.
