These Bang Bang Chicken Sliders feature marinated grilled chicken thighs topped with a creamy, spicy Bang Bang sauce, fresh veggies, and served on soft slider buns. Ideal for parties or a fun family dinner, they offer a delightful fusion of flavors in every bite.

  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 tablespoons honey
  • 2 cloves garlic, minced

  • 1 teaspoon red pepper flakes
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha
  • 1 teaspoon lime juice
  • 12 slider buns
  • 1 cup shredded lettuce
  • 1/2 cup sliced cucumbers
  • 1/4 cup chopped green onions
  • Fresh cilantro leaves for garnish (optional)

Instructions

  1. In a medium bowl, combine the soy sauce, rice vinegar, sesame oil, honey, minced garlic, grated ginger, and red pepper flakes. Whisk until well combined.
  2. Add the chicken thighs to the marinade, ensuring they are fully coated. Cover the bowl with plastic wrap or transfer the chicken and marinade to a resealable plastic bag. Refrigerate for at least 30 minutes, or up to 2 hours for more flavor.
  3. In a small bowl, mix together the mayonnaise, sweet chili sauce, sriracha, and lime juice. Stir until smooth and well combined.
  4. Taste the sauce and adjust the sriracha according to your preferred spice level. Set aside in the refrigerator until ready to use.
  5. Preheat your grill or stovetop grill pan over medium-high heat. If using a grill, oil the grates lightly to prevent sticking.
  6. Remove the chicken from the marinade, allowing any excess marinade to drip off. Discard the remaining marinade.
  7. Place the chicken thighs on the grill. Cook for about 5-7 minutes on each side, or until the internal temperature reaches 165°F (75°C) and the chicken is nicely charred.
  8. Once cooked, remove the chicken from the grill and let it rest for 5 minutes. This allows the juices to redistribute, keeping the chicken moist.
  9. After resting, slice the chicken into thin strips or bite-sized pieces for easy assembly on the sliders.
  10. While the chicken is resting, prepare the slider buns. If desired, lightly toast the buns on the grill or in a toaster for added texture.
  11. Spread a generous amount of Bang Bang sauce on the bottom half of each slider bun.
  12. Layer the shredded lettuce evenly across the sauce-covered buns.
  13. Add a portion of the sliced chicken on top of the lettuce, ensuring each slider has a good amount of chicken.
  14. Top the chicken with sliced cucumbers and a sprinkle of chopped green onions for added crunch and flavor.
  15. Finish by adding a few cilantro leaves on top, if using, and place the top half of the slider bun over the assembled ingredients.
  16. Arrange the assembled sliders on a serving platter. You can secure each slider with a toothpick if desired, to keep them together during serving.
  17. Serve the sliders with extra Bang Bang sauce on the side for dipping, along with any additional toppings like pickled jalapeños or extra cucumbers.
  18. These sliders are best enjoyed fresh, but you can store any leftovers in an airtight container in the refrigerator for up to 2 days. Reheat the chicken gently before serving again.
