Ingredients

Scale
  • 1 pound boneless, skinless chicken thighs
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon sriracha (adjust to taste)
  • 1 teaspoon lime juice
  • 1 teaspoon honey (optional)

Instructions

  1. Cut the boneless, skinless chicken thighs into bite-sized pieces, about 1 to 2 inches in size.
  2. In a shallow bowl, combine the flour, salt, black pepper, garlic powder, onion powder, and paprika.
  3. In another bowl, crack the eggs and whisk them until well beaten.
  4. In a third bowl, add the panko breadcrumbs.
  5. Coat each piece of chicken in the flour mixture, shaking off excess.
  6. Dip the floured chicken into the egg wash, allowing excess to drip off.
  7. Roll the chicken in the panko breadcrumbs, pressing gently to adhere. Repeat for all pieces.
  8. In a large skillet, pour enough vegetable oil to cover the bottom by about 1/4 inch. Heat over medium-high until shimmering.
  9. Carefully add the breaded chicken in a single layer, avoiding overcrowding. Fry for 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C).
  10. Transfer cooked chicken to a plate lined with paper towels to drain excess oil.
  11. In a medium bowl, combine mayonnaise, sweet chili sauce, sriracha, lime juice, and honey (if using). Mix until smooth and well combined. Adjust spiciness or sweetness to taste.
  12. Toss the fried chicken in the Bang Bang sauce or serve it on the side for dipping.

Notes

  • For a healthier option, you can bake the breaded chicken in the oven at 400°F (200°C) for about 20-25 minutes, flipping halfway through.
  • The Bang Bang sauce can be made ahead of time and stored in the refrigerator for up to a week.
