  • 2 ripe bananas
  • 300ml heavy cream

  • 1 teaspoon vanilla extract
  • 12 bananas, sliced
  • Chocolate shavings or cocoa powder (for garnish)
  • Caramel sauce (optional, for drizzling)

Instructions

  1. Preheat your oven to 180°C (350°F).
  2. Crush the digestive biscuits in a food processor or zip-lock bag until fine crumbs.
  3. Combine the crushed biscuits with melted butter and sugar (if using) in a mixing bowl. Mix until well coated.
  4. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
  5. Bake for about 10 minutes until lightly golden. Let it cool completely.
  6. Place the can of sweetened condensed milk in a saucepan, cover with water, and simmer for 2 hours, ensuring the can is submerged.
  7. Carefully remove the can, let it cool, and then open it.
  8. Slice the ripe bananas and set aside.
  9. Whip the heavy cream in a mixing bowl until soft peaks form. Add powdered sugar and vanilla extract, and whip until stiff peaks form.
  10. Spread the caramel filling evenly over the cooled crust.
  11. Layer the sliced bananas over the caramel.
  12. Gently spread the whipped cream over the bananas.
  13. Add additional sliced bananas on top and garnish with chocolate shavings or cocoa powder. Drizzle with caramel sauce if desired.
  14. Cover the pie with plastic wrap or aluminum foil and refrigerate for at least 2 hours or overnight.
  15. Slice the pie into wedges and serve immediately.
