Ingredients

Scale
  • 2 cups cooked jasmine rice
  • 1 lb flank steak, thinly sliced
  • 2 tablespoons vegetable oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 cup mixed vegetables (carrots, peas, and corn)
  • 2 large eggs, lightly beaten
  • 3 tablespoons soy sauce
  • 1 tablespoon oyster sauce
  • 1 tablespoon black pepper
  • 1 teaspoon sesame oil
  • 2 green onions, chopped
  • Salt to taste

Instructions

  1. In a bowl, combine the sliced flank steak with 1 tablespoon of soy sauce, 1 teaspoon of black pepper, and a pinch of salt. Let it marinate for at least 15 minutes.
  2. While the steak is marinating, dice the onion, mince the garlic, and chop the green onions. Chop any fresh vegetables into small, uniform pieces.
  3. Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the marinated steak in a single layer and sear for 2-3 minutes on each side until browned. Remove the steak from the skillet and set aside.
  4. In the same skillet, add another tablespoon of vegetable oil if needed. Sauté the diced onion for 2-3 minutes until translucent.
  5. Stir in the minced garlic and mixed vegetables. Stir-fry for another 2-3 minutes until the vegetables are tender but still vibrant.
  6. Push the vegetables to one side of the skillet and pour the beaten eggs into the empty space. Scramble until fully cooked, then mix with the vegetables.
  7. Break up any clumps of the cooked rice and add it to the skillet. Stir to combine.
  8. Pour in the remaining 2 tablespoons of soy sauce, oyster sauce, and sesame oil. Stir everything together until the rice is well-coated.
  9. Add the cooked steak back into the skillet and toss gently to combine. Adjust seasoning with more salt or black pepper if needed.
  10. Once heated through, remove from heat and let sit for a minute. Serve hot, garnished with chopped green onions.

Notes

  • Use Day-Old Rice: For best results, use rice that has been cooked and refrigerated overnight to prevent stickiness.
  • High Heat Cooking: Cooking on high heat helps achieve a slightly crispy texture in the fried rice.
  • Customization: Feel free to add other proteins or leftover vegetables to suit your taste.
