  • 1 pre-made tart shell (store-bought or homemade)
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup heavy whipping cream
  • 1 cup mixed fresh fruits (such as strawberries, blueberries, kiwi, and bananas)
  • 1 tablespoon lemon juice
  • 1 tablespoon honey (optional)
  • Mint leaves for garnish (optional)

Instructions

  1. In a medium-sized mixing bowl, add the softened cream cheese. Ensure it’s at room temperature for easy mixing.
  2. Using a hand mixer or a whisk, beat the cream cheese until smooth and creamy (about 1-2 minutes).
  3. Gradually add the powdered sugar to the cream cheese, mixing well after each addition to avoid lumps.
  4. Once the sugar is fully incorporated, add the vanilla extract and mix until combined.
  5. In a separate bowl, pour in the heavy whipping cream. Whip the cream until stiff peaks form (about 3-5 minutes).
  6. Gently fold the whipped cream into the cream cheese mixture using a spatula, being careful not to deflate the whipped cream.
  7. Wash all the fresh fruits thoroughly under cold water.
  8. For strawberries, remove the green tops and slice them into thin rounds or halves.
  9. For kiwi, peel the skin and slice it into thin rounds or half-moons.
  10. For bananas, peel and slice them into thin rounds. Toss the banana slices in a little lemon juice to prevent browning.
  11. For blueberries, rinse them and set aside.
  12. In a small bowl, combine the prepared fruits and drizzle with lemon juice. If desired, add honey and gently toss to coat the fruits evenly.
  13. Place the pre-made tart shell on a serving platter or cake stand. Ensure homemade tart shells are completely cooled before filling.
  14. Spread the cream cheese filling evenly into the tart shell, filling it to the edges for a beautiful presentation.
  15. Arrange the fruits starting with strawberries around the edge of the tart.
  16. Add kiwi slices in between the strawberries for contrast.
  17. Fill in the gaps with banana slices and blueberries, ensuring visibility for a vibrant look.
  18. Optionally, add a few mint leaves on top for garnish.
  19. Cover the assembled tart with plastic wrap or a lid to prevent drying out.
  20. Refrigerate for at least 1 hour to allow flavors to meld and the filling to set.
