Brown Sugar Pop-Tart Cookies: A Delicious Twist on a Classic Treat

  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract

  • 1 cup brown sugar frosting (store-bought or homemade)
  • 1/2 cup sprinkles (optional)
  • 1/2 cup fruit preserves (strawberry, raspberry, or your choice)

Instructions

  1. In a large mixing bowl, cream together the softened butter, packed brown sugar, and granulated sugar using an electric mixer on medium speed for about 2-3 minutes until light and fluffy.
  2. Add the eggs, one at a time, mixing well after each addition. Pour in the vanilla extract and continue mixing until well combined.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. Gradually add the dry ingredients to the wet mixture, mixing on low speed until just combined. Avoid overmixing to prevent tough cookies.
  5. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes.
  6. Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  7. Using a cookie scoop or tablespoon, scoop out portions of dough and roll them into balls, aiming for about 1.5 inches in diameter.
  8. Place the dough balls on the prepared baking sheets, leaving about 2 inches of space between each.
  9. Gently flatten each dough ball with the palm of your hand to about 1/2 inch thick.
  10. Bake the cookies in the preheated oven for 10-12 minutes, or until the edges are lightly golden. The centers may look slightly underbaked.
  11. Let the cookies cool on the baking sheets for about 5 minutes before transferring them to a wire rack to cool completely.
  12. Once the cookies are completely cool, spread a generous layer of fruit preserves on the bottom side of one cookie.
  13. Place another cookie on top, bottom side down, creating a sandwich, and gently press them together.
  14. Spread a layer of brown sugar frosting on top of the cookie sandwich.
  15. If desired, sprinkle colorful sprinkles on top of the frosting for a festive touch.
  16. Store assembled cookies in an airtight container at room temperature for 3-5 days.
  17. For longer storage, freeze unassembled cookies by freezing them in a single layer on a baking sheet, then transferring to a freezer-safe bag once frozen.
