  • 1 cup of granulated sugar
  • 1 cup of packed brown sugar
  • 1 cup of light corn syrup
  • 1 teaspoon of vanilla extract
  • 6 cups of crispy rice cereal
  • 1 cup of creamy peanut butter
  • 1 cup of Butterfinger candy bars, chopped (about 45 bars)
  • 2 cups of milk chocolate chips
  • 1 tablespoon of vegetable oil (optional, for melting chocolate)

Instructions

  1. In a large saucepan, melt the butter over medium heat, stirring occasionally to prevent browning.
  2. Add the granulated sugar, brown sugar, and corn syrup to the melted butter. Stir continuously until the mixture reaches a gentle boil.
  3. Once boiling, reduce the heat to low and let it simmer for about 2 minutes to dissolve the sugars completely.
  4. Remove from heat and stir in the vanilla extract.
  5. In a large mixing bowl, combine the crispy rice cereal and chopped Butterfinger bars.
  6. Pour the warm butter and sugar mixture over the cereal and Butterfinger mixture, folding gently until evenly coated.
  7. Add the creamy peanut butter while the mixture is still warm, and fold until fully incorporated.
  8. Line a 9×13 inch baking dish with parchment paper.
  9. Transfer the mixture into the prepared dish and press firmly to compact it evenly.
  10. Let it cool at room temperature for about 30 minutes or refrigerate to speed up the process.
  11. In a microwave-safe bowl, combine the milk chocolate chips and vegetable oil (if using).
  12. Microwave in 30-second intervals, stirring in between, until melted and smooth.
  13. Once the base has cooled, lift it out of the dish using the parchment paper and place it on a cutting board.
  14. Pour the melted chocolate over the top, spreading it evenly with a spatula.
  15. Sprinkle additional chopped Butterfinger pieces on top of the melted chocolate if desired.
  16. Allow the chocolate to set at room temperature or refrigerate for about 15-20 minutes.
  17. Once the chocolate has set, cut the bars into squares or rectangles.
