Carrot Cake Bars: Deliciously Moist and Easy Recipe for Your Next Dessert

Deliciously moist carrot cake bars filled with grated carrots and crushed pineapple, topped with a rich cream cheese frosting. Perfect for any occasion and easily customizable with your favorite mix-ins!

  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg

  • 1 cup vegetable oil
  • 4 large eggs
  • 2 cups grated carrots (about 4 medium carrots)
  • 1 cup crushed pineapple, drained
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1 teaspoon vanilla extract
  • 1/2 cup raisins (optional)
  • 8 oz cream cheese, softened
  • 1/2 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 1 teaspoon vanilla extract (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the dry ingredients: flour, sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk until well combined.
  3. In a separate bowl, mix the wet ingredients: vegetable oil, eggs, and vanilla extract. Whisk until smooth.
  4. Grate the carrots and add them to the wet mixture.
  5. Drain the crushed pineapple and add it to the wet mixture along with the optional nuts and raisins. Stir to combine.
  6. Pour the wet mixture into the dry ingredients and gently fold until just combined.
  7. Grease a 9×13 inch baking pan or line it with parchment paper. Pour the batter into the pan and spread evenly.
  8. Bake for 30-35 minutes, or until a toothpick inserted in the center comes out clean.
  9. Let the bars cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. For the frosting, beat together cream cheese, butter, powdered sugar, and vanilla extract until smooth.
  11. Once the bars are cool, spread the cream cheese frosting over the top.
  12. Slice into squares and serve.
