Cast Iron Chicken Broccoli Ranch: A Delicious One-Pan Meal Recipe

This creamy Ranch Chicken and Broccoli dish features seared chicken breasts topped with ranch dressing and melted cheddar cheese, baked alongside vibrant broccoli. It’s a comforting, flavorful meal that’s easy to prepare and perfect for the whole family.

  • 4 boneless, skinless chicken breasts
  • 2 cups fresh broccoli florets
  • 1 cup ranch dressing (store-bought or homemade)
  • 1 cup shredded cheddar cheese
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, drizzle the chicken breasts with olive oil. Sprinkle with garlic powder, onion powder, paprika, salt, and pepper. Rub the seasonings into the chicken until well-coated.
  3. Heat a large cast iron skillet over medium-high heat. Add the seasoned chicken breasts and sear for 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
  4. In a small pot, bring salted water to a boil. Add broccoli florets and blanch for 2-3 minutes until bright green and slightly tender. Drain and transfer to a bowl of ice water to stop cooking. Drain again and set aside.
  5. In the same skillet, return the seared chicken and arrange the blanched broccoli around it.
  6. Pour ranch dressing evenly over the chicken and broccoli.
  7. Sprinkle shredded cheddar cheese over the ranch-dressed chicken and broccoli.
  8. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and the cheese is bubbly and golden.
  9. Use a meat thermometer to ensure the chicken is fully cooked. If necessary, return to the oven for a few more minutes.
  10. Remove from the oven and let rest for a few minutes. Garnish with fresh parsley if desired.
  11. Serve directly from the skillet or transfer to individual plates, spooning some of the creamy ranch sauce over the top.
  12. Enjoy the delicious combination of flavors with a side of rice, quinoa, or a simple green salad.
