Instructions

  1. In a large mixing bowl, add the softened cream cheese. Beat until smooth and creamy, about 2-3 minutes.
  2. Add the granulated sugar and mix until fluffy.
  3. Incorporate the sour cream, vanilla extract, and lemon juice. Mix until smooth and well combined.
  4. Set the filling aside, covering it with plastic wrap.
  5. Lay the egg roll wrappers flat and keep them covered with a damp cloth.
  6. Scoop about 2 tablespoons of cheesecake filling into the center of each wrapper.
  7. Fold the bottom corner over the filling, tuck it in, then fold in the sides and roll tightly, sealing with beaten egg.
  8. Heat vegetable oil in a deep skillet to 350°F (175°C).
  9. Fry the egg rolls in batches for 2-3 minutes on each side until golden brown and crispy.
  10. Remove and drain on paper towels.
