Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Trim the woody ends of the asparagus by bending each stalk until it snaps or cutting about 1-2 inches off the bottom.
  3. Rinse the asparagus under cold water and pat dry with a clean towel.
  4. In a large bowl, combine olive oil, garlic powder, salt, and black pepper. Stir well.
  5. Add the trimmed asparagus to the bowl and toss until evenly coated.
  6. In a separate bowl, mix shredded mozzarella and grated Parmesan cheese. Optionally, add breadcrumbs for crunch.
  7. If using, drizzle lemon juice over the cheese mixture and stir to combine.
  8. Line a baking sheet with parchment paper or grease it lightly. Spread the seasoned asparagus in a single layer.
  9. Evenly sprinkle the cheese mixture over the asparagus.
  10. If using, sprinkle breadcrumbs on top of the cheese layer.
  11. Bake in the preheated oven for 15-20 minutes until tender and cheese is bubbly and golden.
  12. After 15 minutes, check tenderness with a fork. If cheese isn’t golden, bake for an additional 5 minutes.
  13. Remove from the oven, let cool for a minute, and sprinkle with chopped parsley.
