  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 package (17.3 oz) frozen puff pastry (2 sheets), thawed
  • 1 egg, beaten (for egg wash)
  • Optional: 1/4 teaspoon red pepper flakes (for a spicy kick)

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper and set aside.
  2. In a large mixing bowl, combine the thawed and drained spinach with the ricotta cheese. Make sure to squeeze out as much moisture from the spinach as possible to prevent soggy puffs.
  3. Add the shredded mozzarella cheese and grated Parmesan cheese to the bowl. Mix well until all the cheeses are evenly distributed.
  4. Crack the large egg into the mixture and add the garlic powder, onion powder, salt, black pepper, and optional red pepper flakes. Stir until all ingredients are well combined and form a cohesive filling.
  5. Unroll the thawed puff pastry sheets on a lightly floured surface. If the pastry is too sticky, sprinkle a little flour on top to prevent sticking.
  6. Using a sharp knife or a pizza cutter, cut each sheet of puff pastry into 3 equal strips lengthwise, and then cut each strip into 3 squares, resulting in 9 squares per sheet. You should have a total of 18 squares.
  7. Take one square of puff pastry and place about 1 tablespoon of the spinach and cheese filling in the center. Be careful not to overfill, as this can cause the puffs to burst during baking.
  8. Fold the pastry square over the filling to form a triangle. Press the edges together firmly to seal. You can use a fork to crimp the edges for a decorative touch and to ensure a tight seal.
  9. Repeat the filling and folding process with the remaining squares of puff pastry and filling until all are assembled.
  10. Once all the puffs are assembled, take the beaten egg and brush it over the tops of each puff. This will give them a beautiful golden color when baked.
  11. Optional: Sprinkle a little extra grated Parmesan cheese on top of each puff for added flavor and a nice finish.
  12. Carefully place the prepared spinach puffs on the lined baking sheet, leaving some space between each puff to allow for expansion during baking.
  13. Place the baking sheet in the preheated oven and bake for 20-25 minutes, or until the puffs are golden brown and puffed up.
  14. Keep an eye on them during the last few minutes of baking to ensure they do not over-brown. If they are browning too quickly, you can cover them loosely with aluminum foil.
  15. Once baked, remove the cheesy spinach puffs from the oven and let them cool for a few minutes on the baking sheet.
