Chicken Avocado Burritos: A Delicious and Healthy Recipe to Try Today

These delicious chicken burritos are filled with tender shredded chicken, creamy avocado, and a zesty rice and bean mixture, all wrapped in warm tortillas.   • 2 large chicken breasts, boneless and skinless
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 1 ripe avocado
  • 1 cup cooked rice (white or brown)
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (canned or frozen)
  • 1 cup shredded cheese (cheddar or Monterey Jack)
  • 1/2 cup fresh cilantro, chopped
  • Juice of 1 lime
  • 4 large flour tortillas
  • Sour cream, for serving (optional)
  • Hot sauce, for serving (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Pat the chicken breasts dry with paper towels.
  3. In a small bowl, mix olive oil, garlic powder, onion powder, cumin, smoked paprika, salt, and pepper.
  4. Rub the spice mixture over the chicken breasts.
  5. Place the chicken on a baking sheet lined with parchment paper and bake for 25-30 minutes until the internal temperature reaches 165°F (75°C).
  6. Let the chicken rest for 5 minutes, then shred or chop it.
  7. Cook rice according to package instructions.
  8. If using frozen corn, cook it; if using canned, drain and rinse.
  9. In a medium bowl, combine rice, black beans, corn, cheese, cilantro, and lime juice.
  10. Mash the avocado in a bowl, adding salt and lime juice to taste.
  11. Lay a tortilla flat and spread mashed avocado in the center.
  12. Add a layer of chicken and a scoop of the rice and bean mixture.
  13. Optionally, add sour cream and hot sauce.
  14. Fold the sides of the tortilla inwards and roll tightly from the bottom up.
  15. Place the burrito seam-side down on a plate and repeat with remaining tortillas.
  16. For crispy burritos, pan-fry in a skillet with olive oil for 2-3 minutes on each side or bake in the oven for 10-15 minutes.
  17. Serve warm with sour cream and hot sauce.
