Chicken Katsu Sandwich: A Delicious Twist on a Classic Favorite

Savor the crispy Chicken Katsu Sandwich, featuring tender chicken breasts coated in panko breadcrumbs, served on soft bread with crunchy cabbage and tangy tonkatsu sauce. Ideal for a quick and satisfying meal!

  • 2 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 1 cup all-purpose flour
  • 2 large eggs
  • 1 cup panko breadcrumbs
  • Vegetable oil, for frying
  • 4 slices of soft white bread (or your choice of bread)
  • Shredded cabbage (for topping)
  • Tonkatsu sauce (for serving)
  • Mayonnaise (optional, for spreading)
  • Pickles (optional, for garnish)

Instructions

  1. Place the chicken breasts between two sheets of plastic wrap or parchment paper. Using a meat mallet or rolling pin, gently pound the chicken to an even thickness of about 1/2 inch. Season both sides with salt and pepper.
  2. In three shallow dishes, set up your breading station: First dish: all-purpose flour. Second dish: whisked eggs. Third dish: panko breadcrumbs. Have a clean plate or tray ready for the breaded chicken.
  3. Dredge one chicken breast in flour, shaking off excess. Dip it into the beaten eggs, letting excess drip off. Press into panko breadcrumbs, ensuring it’s fully coated. Repeat for the second chicken breast.
  4. In a large skillet, pour enough vegetable oil to cover the bottom by about 1/4 inch. Heat over medium-high until shimmering. Carefully place the breaded chicken into the hot oil, cooking in batches if necessary. Fry for 4-5 minutes on each side until golden brown and cooked through (internal temperature should reach 165°F/75°C). Transfer to a plate lined with paper towels to drain excess oil.
  5. Optionally toast the bread slices. Spread mayonnaise on one side of each slice (if using). Place a piece of chicken katsu on the mayonnaise side of two slices, top with shredded cabbage, and drizzle with tonkatsu sauce. Place the other slice of bread on top, mayonnaise side down, and gently press down.
  6. Cut the sandwich in half diagonally for presentation. Serve with pickles on the side, if desired. Enjoy warm with fries or a salad.

Notes

  • For a spicy kick, add sriracha or spicy mayo to the sandwich.
