Chicken Rice Casserole: A Delicious and Easy Recipe for Family Dinners

This Chicken and Rice Casserole is a creamy, comforting dish featuring tender chicken, fluffy rice, and mixed vegetables, all topped with melted cheese. It’s an easy, one-dish meal perfect for busy weeknights or family gatherings.

  • 2 cups cooked chicken, shredded or diced
  • 1 cup uncooked white rice
  • 1 can (10.5 oz) cream of chicken soup
  • 1 can (10.5 oz) cream of mushroom soup
  • 1 cup chicken broth
  • 1 cup frozen mixed vegetables (peas, carrots, corn)
  • 1 cup shredded cheddar cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons olive oil or butter
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook your rice according to the package instructions (2:1 water-to-rice ratio).
  3. Shred or dice your cooked chicken.
  4. In a large mixing bowl, combine the cooked chicken, cooked rice, cream of chicken soup, cream of mushroom soup, and chicken broth. Stir until well combined.
  5. Add the frozen mixed vegetables directly into the mixture and fold gently.
  6. Sprinkle in the garlic powder, onion powder, dried thyme, salt, and pepper. Stir to distribute the seasonings evenly.
  7. Fold in half of the shredded cheddar cheese.
  8. Grease a 9×13 inch baking dish with olive oil or butter.
  9. Pour the chicken and rice mixture into the prepared baking dish and spread evenly.
  10. Top with the remaining shredded cheddar cheese.
  11. Cover the baking dish with aluminum foil.
  12. Bake in the preheated oven for 30 minutes.
  13. Remove the foil and bake for an additional 15-20 minutes, or until the cheese is bubbly and golden brown.
  14. Check that the rice is fully cooked and the vegetables are tender. Add a splash of chicken broth if it looks dry.
  15. Let the casserole sit for 5-10 minutes before serving.
  16. Cut into portions and serve on plates.
  17. Garnish with fresh parsley if desired, and pair with a side salad or crusty bread.

  • You can use leftover rotisserie chicken for added flavor.
