Chicken Stuffing Casserole: Easy Recipe for a Comforting Meal

  • 2 lbs boneless, skinless chicken breasts
  • 1 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/4 tsp paprika
  • 1 (6 oz) package stuffing mix (Pepperidge Farm Herb Seasoned recommended)
  • 1 1/2 cups chicken broth
  • 1/2 cup butter, melted
  • 1/2 cup chopped celery
  • 1/4 cup chopped onion
  • 1 (10.75 oz) can condensed cream of chicken soup
  • 1/2 cup sour cream
  • 1/4 cup milk
  • 1/4 tsp black pepper
  • 1/4 cup shredded cheddar cheese (optional, for topping)

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut chicken breasts into 1-inch cubes (optional).
  3. Heat olive oil in a large skillet over medium-high heat. Season chicken with salt, pepper, garlic powder, and paprika. Cook for 5-7 minutes, until lightly browned on all sides. Remove from skillet and set aside.
  4. In a large bowl, combine stuffing mix, melted butter, chopped celery, and chopped onion. Pour chicken broth over the mixture and stir well. Let sit for 5 minutes.
  5. Grease a 9×13 inch baking dish. Spread stuffing mixture evenly in the bottom. Arrange cooked chicken pieces over the stuffing.
  6. In a medium bowl, whisk together cream of chicken soup, sour cream, milk, and black pepper.
  7. Pour the creamy sauce evenly over the chicken.
  8. Cover the baking dish with aluminum foil. Bake for 30 minutes.
  9. Remove the foil and bake for an additional 10-15 minutes, or until bubbly and lightly golden brown.
  10. Sprinkle shredded cheddar cheese over the top during the last 5 minutes of baking.
  11. Remove from oven and let rest for 5-10 minutes before serving.
