  • 1/4 cup crushed Biscoff cookies (for garnish)

Instructions

  1. In a large mixing bowl, combine the crushed Biscoff cookies and softened cream cheese. Mix until well combined; the mixture should be thick and slightly sticky.
  2. Add the Biscoff spread and vanilla extract. Mix until smooth and evenly incorporated.
  3. Melt the semi-sweet chocolate chips in a microwave-safe bowl in 30-second intervals, stirring in between, or use a double boiler. Let it cool slightly before adding to the cookie mixture.
  4. Pour the melted chocolate into the Biscoff mixture and stir until fully integrated.
  5. Cover the bowl with plastic wrap and refrigerate for about 30 minutes to firm up.
  6. Once chilled, scoop out about a tablespoon of the mixture and roll it into a ball. Place on a parchment-lined baking sheet.
  7. Repeat until all the mixture is rolled into balls (about 20-25 truffles).
  8. Refrigerate the rolled truffles for another 15-20 minutes to firm them up further.
  9. Melt the additional 1/2 cup of chocolate chips for coating.
  10. Dip each truffle into the melted chocolate using a fork or toothpick, allowing excess chocolate to drip off before placing back on the baking sheet.
  11. Sprinkle crushed Biscoff cookies on top of each truffle before the chocolate sets.
  12. Repeat for all truffles, reheating chocolate if necessary.
  13. Refrigerate the coated truffles for about 30 minutes to set the chocolate.
  14. Transfer to an airtight container for storage; they can be kept in the refrigerator for up to two weeks.
  15. Let truffles sit at room temperature for about 10 minutes before serving to enhance flavor and texture.
  16. Arrange on a decorative plate or in a gift box for sharing.
  17. Drizzle melted white chocolate over the truffles for an extra touch.
