Indulge in a rich and creamy homemade chocolate mousse made with dark chocolate, whipped cream, and fluffy egg whites. This classic dessert is a luxurious treat perfect for any occasion, offering a delightful balance of flavors and textures.

Ingredients

Scale
  • 200g dark chocolate (70% cocoa), chopped
  • 3 tablespoons unsalted butter
  • 3 large eggs, separated
  • 1/4 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 cup heavy cream
  • Pinch of salt
  • Chocolate shavings or cocoa powder for garnish (optional)

Instructions

  1. Place the chopped dark chocolate and unsalted butter in a heatproof bowl over a pot of simmering water (double boiler). Stir occasionally until melted and smooth (5-7 minutes). Remove from heat and let cool slightly.
  2. In a separate bowl, whisk the egg yolks and granulated sugar until pale and creamy (2-3 minutes). Add vanilla extract and mix well.
  3. Gradually pour the melted chocolate mixture into the egg yolk mixture, stirring constantly to combine.
  4. In a clean bowl, add egg whites and a pinch of salt. Beat with an electric mixer on medium speed until soft peaks form (3-4 minutes). Gradually add remaining sugar (1 tablespoon at a time) until stiff peaks form.
  5. In another bowl, whip the heavy cream until soft peaks form. Be careful not to over-whip.
  6. Fold a small amount of whipped cream into the chocolate mixture to lighten it. Then gently fold in the remaining whipped cream until no white streaks remain.
  7. Fold in a third of the whipped egg whites to loosen the mixture, then gently fold in the remaining egg whites in two additions.
  8. Spoon the mousse into individual cups or ramekins, filling them about three-quarters full. Cover with plastic wrap and refrigerate for at least 4 hours or overnight.
  9. Remove from the refrigerator and gently peel off the plastic wrap. Garnish with chocolate shavings or cocoa powder if desired. Serve immediately and enjoy!

Notes

  • Ensure all bowls and utensils are clean and dry when whipping egg whites.
  • Substitute dark chocolate with milk chocolate for a sweeter mousse.
  • For added flavor, consider incorporating coffee liqueur or orange zest into the chocolate mixture.
