  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup honey or maple syrup
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • 1 cup rolled oats (gluten-free if needed)
  • 1/2 cup chocolate chips (optional, for topping)
  • 1/4 cup chopped nuts (optional, for topping)

Instructions

  1. In a large mixing bowl, combine 1 cup of creamy peanut butter and 1/4 cup of melted coconut oil. Melt the coconut oil in the microwave for about 20-30 seconds until liquid.
  2. Add 1/2 cup of honey (or maple syrup) to the mixture.
  3. Stir in 1 teaspoon of vanilla extract and 1/4 teaspoon of salt.
  4. Sift in 1/2 cup of unsweetened cocoa powder and mix well.
  5. Fold in 1 cup of rolled oats until you have a thick, cohesive batter.
  6. Line an 8×8 inch (or 9×9 inch) square baking pan with parchment paper, leaving overhang on the sides.
  7. Lightly grease the parchment paper with coconut oil or cooking spray.
  8. Preheat your oven to 350°F (175°C).
  9. Pour the batter into the prepared baking pan and spread it out evenly.
  10. Optionally, sprinkle 1/2 cup of chocolate chips and 1/4 cup of chopped nuts on top.
  11. Bake for 20-25 minutes, until the edges pull away from the sides and the center is set but slightly soft.
  12. Let cool in the pan for 10 minutes, then lift out using the parchment paper and transfer to a wire rack to cool completely.
  13. Cut the cooled bars into squares or rectangles (about 16 bars).
  14. Optionally, drizzle melted chocolate over the top for an extra treat.
  15. Store in an airtight container at room temperature for up to a week, or refrigerate for longer freshness. These bars also freeze well.
