4 cups all-purpose flour
1 packet (2 1/4 teaspoons) active dry yeast
1 cup whole milk, warmed to about 110°F (43°C)
1/2 cup granulated sugar
1/2 cup unsalted butter, melted and slightly cooled
2 large eggs
1 teaspoon salt
1 tablespoon ground cinnamon
1/2 cup packed brown sugar
1/4 cup unsalted butter, softened (for filling)
1 cup powdered sugar (for icing)
2 tablespoons milk (for icing)
1 teaspoon vanilla extract (for icing)
Instructions
In a small bowl, combine the warm milk and sugar. Sprinkle the yeast over the top and let it sit for about 5-10 minutes until it becomes frothy.
In a large mixing bowl, combine 2 cups of flour and salt. Make a well in the center and add the melted butter, eggs, and the yeast mixture. Stir until combined.
Gradually add the remaining flour, one cup at a time, mixing until a soft dough forms.
Turn the dough out onto a floured surface and knead for about 5-7 minutes until its smooth and elastic.
Place the kneaded dough in a greased bowl, cover it with a clean kitchen towel, and let it rise in a warm place for about 1-2 hours, or until it has doubled in size.
In a small bowl, mix together the brown sugar and ground cinnamon.
Spread the softened butter evenly over the surface of the dough once it has risen.
Sprinkle the cinnamon-sugar mixture evenly over the buttered dough.
Once the dough has risen, punch it down gently to release the air. Turn it out onto a floured surface and roll it into a rectangle about 16×12 inches.
Starting from one of the long edges, carefully roll the dough tightly into a log.
Pinch the seam to seal it and cut the log into 12 equal pieces.
Place the cut rolls into a greased 9×13 inch baking dish, leaving space between each roll.
Cover the dish with a kitchen towel and let the rolls rise again in a warm place for about 30-45 minutes.
Preheat your oven to 350°F (175°C).
Bake the rolls for 25-30 minutes, or until they are golden brown on top.
In a medium bowl, combine the powdered sugar, milk, and vanilla extract. Mix until smooth and creamy.
Once the rolls are out of the oven, let them cool for a few minutes before drizzling the icing over the top.
Notes
For a richer flavor, you can add a pinch of nutmeg to the cinnamon-sugar mixture.
These cinnamon rolls can be made ahead of time and stored in the refrigerator overnight before baking.
Feel free to add nuts or raisins to the filling for extra texture and flavor.
