Classic Risotto Dish: A Step-by-Step Guide to Perfecting This Italian Favorite

  • 4 cups chicken or vegetable broth
  • 1 cup dry white wine
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil

  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: 1 cup of mushrooms, peas, or asparagus for added flavor and texture

Instructions

  1. In a medium saucepan, pour in the chicken or vegetable broth and bring it to a gentle simmer over medium heat. Once simmering, reduce the heat to low to keep it warm.
  2. In a large, heavy-bottomed pot or Dutch oven, heat the olive oil over medium heat. Add the finely chopped onion and sauté for about 5 minutes until translucent. Stir occasionally to prevent browning. Add the minced garlic and sauté for an additional 1-2 minutes until fragrant.
  3. Add the Arborio rice to the pot, stirring well to coat the grains with the oil and onion mixture. Toast the rice for about 2-3 minutes, stirring frequently. Pour in the dry white wine and stir continuously until mostly absorbed, about 2-3 minutes.
  4. Begin adding the warm broth to the rice, one ladleful at a time, stirring gently and continuously. Allow the rice to absorb most of the broth before adding the next ladleful. This process will take about 18-20 minutes, until the rice is al dente.
  5. If using mushrooms, peas, or asparagus, add them in the last 5-7 minutes of cooking.
  6. Once the rice is cooked to your liking, remove the pot from heat. Stir in the unsalted butter and freshly grated Parmesan cheese until creamy.
  7. Taste the risotto and season with salt and pepper as needed. Serve immediately, garnished with freshly chopped parsley.
