  • 8 oz Brie cheese, cut into small cubes

  • 1/4 cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • Fresh rosemary or thyme for garnish (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Place the loaf of crusty bread on a cutting board. Using a serrated knife, slice the bread into a grid pattern, about 1 inch apart, without cutting all the way through the bottom.
  3. Cut the Brie cheese into small cubes, aiming for about 1-inch pieces.
  4. Rinse fresh cranberries under cold water, removing any stems or blemished berries. If using frozen cranberries, ensure they are fully thawed and drained.
  5. In a medium bowl, combine cranberries, brown sugar, melted butter, vanilla extract, cinnamon, nutmeg, and salt. Stir until cranberries are well coated.
  6. Gently pull apart the slices of bread and fill each cut with cubes of Brie and spoonfuls of the cranberry mixture. Pack it in generously!
  7. Drizzle any remaining melted butter over the top of the stuffed loaf.
  8. Wrap the entire loaf in aluminum foil to keep it moist while baking.
  9. Place the wrapped bread on a baking sheet and bake for about 20 minutes. Remove the foil and bake for an additional 10-15 minutes, or until golden brown and bubbly.
  10. Pull apart a section to check if the cheese is melted and gooey. If not, bake for a few more minutes.
  11. Allow the bread to cool for about 5 minutes after removing it from the oven.
  12. Optionally, sprinkle fresh rosemary or thyme over the top for added flavor and color.
  13. Serve warm and encourage guests to pull apart the pieces for a delicious combination of melted Brie and tart cranberries.
