Creamy Cajun Chicken Orzo: A Delicious One-Pot Recipe for Dinner

  • 1 pound boneless, skinless chicken breasts
  • 2 tablespoons Cajun seasoning
  • 2 tablespoons olive oil
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 cup uncooked orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with Cajun seasoning, coating evenly.
  2. Heat olive oil in a large skillet over medium-high heat.
  3. Add the chicken and cook for 6-7 minutes on each side until golden brown and the internal temperature reaches 165°F (75°C).
  4. Remove from skillet and let rest for 5 minutes before slicing into bite-sized pieces.
  5. In the same skillet, add diced onion and sauté for 3-4 minutes until translucent.
  6. Add minced garlic and diced red bell pepper, sautéing for another 2-3 minutes until tender.
  7. Stir in uncooked orzo pasta, toasting for 1-2 minutes.
  8. Pour in chicken broth, bring to a boil, then reduce heat to low and cover.
  9. Simmer for 10-12 minutes until orzo is al dente and has absorbed most of the liquid, stirring occasionally.
  10. Stir in heavy cream, mixing well.
  11. Add grated Parmesan cheese, stirring until melted and combined.
  12. Toss in frozen peas and sliced chicken, stirring until heated through.
  13. Taste and adjust seasoning with salt and pepper.
  14. Remove from heat and serve in bowls, garnished with freshly chopped parsley.

Notes

  • For extra spice, feel free to add more Cajun seasoning to the chicken.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days or frozen for up to 2 months. Reheat gently, adding a splash of chicken broth or cream if needed.
