Savor a crispy cod sandwich featuring a light batter, served on toasted rolls with fresh lettuce, juicy tomatoes, and creamy tartar sauce. Ideal for a delightful lunch or dinner!

Ingredients

Scale
  • 4 pieces of fresh cod fillets (about 6 ounces each)
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cold beer (or sparkling water for a non-alcoholic version)
  • Vegetable oil for frying
  • 4 sandwich rolls (brioche or ciabatta recommended)
  • 1 cup shredded lettuce
  • 1 large tomato, sliced
  • 1/2 cup tartar sauce (store-bought or homemade)
  • Optional: pickles for garnish

Instructions

  1. Pat the cod fillets dry with paper towels to help the batter adhere better.
  2. In a large mixing bowl, combine the flour, baking powder, paprika, garlic powder, onion powder, salt, and black pepper. Whisk until well mixed.
  3. Gradually pour in the cold beer (or sparkling water) while whisking continuously until the batter is smooth and slightly thick. Let it rest for 10-15 minutes.
  4. In a large, deep skillet or heavy-bottomed pot, pour in enough vegetable oil to reach a depth of about 2 inches.
  5. Heat the oil over medium-high heat until it reaches 350°F (175°C). Test the oil with a small amount of batter; it should sizzle and rise to the surface.
  6. Dip each cod fillet into the batter, ensuring it is fully coated. Allow excess batter to drip off.
  7. Fry the fillets in batches for about 4-5 minutes on each side, or until golden brown and crispy. Use a slotted spoon to flip them halfway through.
  8. Remove the fillets and place them on a plate lined with paper towels. Season with extra salt while hot.
  9. Lightly toast the sandwich rolls until golden brown if desired.
  10. Spread a generous amount of tartar sauce on the bottom half of each roll.
  11. Place one cod fillet on top of the tartar sauce on each roll.
  12. Add shredded lettuce, followed by slices of fresh tomato. Add pickles if desired.
  13. Spread more tartar sauce on the top half of the roll and place it on top of the sandwich.

Notes

  • For a non-alcoholic version, use sparkling water instead of beer.
  • Feel free to customize the toppings with your favorite ingredients.
