  • 1/4 teaspoon turmeric powder

  • 1/4 teaspoon black pepper
  • 1/4 cup finely chopped onion
  • 1/4 cup finely chopped fresh cilantro (or parsley)
  • 12 green chilies, finely chopped (optional, for heat)
  • 1/4 cup water (adjust as needed)
  • Oil for frying (vegetable or canola oil works well)

Instructions

  1. In a large mixing bowl, combine the all-purpose flour, chickpea flour, baking powder, cumin powder, coriander powder, turmeric powder, salt, and black pepper. Whisk until well mixed.
  2. Add the thawed peas to the bowl. Lightly mash some peas with a fork for texture, or leave them whole for more bite.
  3. Stir in the finely chopped onion, cilantro, and green chilies (if using).
  4. Gradually add water, starting with 1/4 cup, mixing until you achieve a thick batter that holds together. Adjust with more water if necessary.
  5. In a large frying pan, pour enough oil to cover the bottom by about 1/4 inch. Heat over medium heat.
  6. Test the oil by dropping a small spoonful of batter; if it sizzles, the oil is ready.
  7. Drop spoonfuls of batter into the hot oil, frying in batches of 4-5 fritters at a time.
  8. Fry for 3-4 minutes on one side until golden brown, then flip and fry the other side for another 3-4 minutes.
  9. Remove fritters and place them on a plate lined with paper towels to absorb excess oil. Repeat with remaining batter.
  10. Arrange fritters on a serving platter. Garnish with chopped cilantro or parsley if desired.
  11. Serve with a tangy yogurt sauce or spicy chutney. For a yogurt sauce, mix plain yogurt with lemon juice, salt, and chopped herbs.
  12. Pair with a fresh salad or roasted vegetables for a complete meal, or serve as an appetizer.
