Crock Pot Chicken and Noodles: Easy Recipe for a Comforting Meal

  • 2 pounds boneless, skinless chicken breasts
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 3 cups egg noodles
  • 2 cups frozen mixed vegetables (peas, carrots, corn)
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the chicken breasts under cold water and pat dry with paper towels.
  2. In a large skillet, heat olive oil over medium-high heat. Add chicken breasts, season with salt and pepper, and sear for 4-5 minutes on each side until golden brown. Remove from skillet and set aside.
  3. In the same skillet, add diced onion and sauté for 3-4 minutes until translucent. Add minced garlic and sauté for an additional 1-2 minutes.
  4. Transfer the onion and garlic to the crock pot. Add the seared chicken breasts on top.
  5. Pour in chicken broth, ensuring chicken is submerged. Add heavy cream, dried thyme, and rosemary.
  6. Toss in frozen mixed vegetables and season with additional salt and pepper. Stir gently to combine.
  7. Cover the crock pot and cook on low for 6-8 hours or on high for 3-4 hours.
  8. About 30 minutes before serving, remove chicken and shred with two forks. Return shredded chicken to the crock pot and stir.
  9. In a separate pot, bring water to a boil and add a pinch of salt. Cook egg noodles according to package instructions (6-8 minutes) until al dente. Drain and set aside.
  10. In a large serving bowl, add cooked egg noodles and ladle the creamy chicken and vegetable mixture over the top. Garnish with freshly chopped parsley.
  11. Serve hot and enjoy!
