  • 4 boneless, skinless chicken breasts
  • 1.5 pounds of baby potatoes, halved
  • 1 medium onion, diced
  • 4 cloves of garlic, minced
  • 1 cup of low-sodium chicken broth
  • 1 tablespoon of olive oil
  • 1 teaspoon of dried thyme
  • 1 teaspoon of dried rosemary
  • 1 teaspoon of paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Rinse the chicken breasts under cold water and pat dry with paper towels. Season both sides generously with salt, pepper, paprika, thyme, and rosemary, rubbing the spices in well.
  2. Wash the baby potatoes thoroughly and halve them. Place in a large bowl and drizzle with olive oil, tossing to coat evenly.
  3. Dice the onion and mince the garlic. Set aside.
  4. In the crockpot, place the seasoned chicken breasts at the bottom, followed by the halved potatoes.
  5. Sprinkle the diced onion and minced garlic over the chicken and potatoes.
  6. Carefully pour the chicken broth over the mixture. For a richer flavor, substitute half of the broth with white wine.
  7. Cover and cook on low for 6-8 hours or on high for 3-4 hours.
  8. About 30 minutes before the cooking time is up, check the chicken’s internal temperature (should reach 165°F or 75°C).
  9. If possible, stir the mixture every couple of hours for even cooking.
  10. Once cooked, taste the broth and adjust seasoning if necessary.
  11. Remove the chicken and place on a serving platter. Use a slotted spoon to serve the potatoes and onions alongside.
  12. Sprinkle chopped fresh parsley over the top for added flavor and presentation.

Notes

  • Allow leftovers to cool before transferring to an airtight container. Store in the refrigerator for up to 3-4 days. Reheat in the microwave or stovetop, adding a splash of chicken broth if needed.
