Curried Sausages Dish: A Flavorful Recipe for Your Next Meal

This Curried Sausages dish features juicy sausages simmered in a creamy coconut curry sauce, enriched with aromatic spices. It’s a comforting and easy-to-make meal, perfect over rice or with naan, that will delight your taste buds.

  • 4 large sausages (pork, chicken, or vegetarian)
  • 2 tablespoons vegetable oil
  • 1 large onion, finely chopped
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon curry powder
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • 1/2 teaspoon turmeric powder
  • 1/2 teaspoon chili powder (adjust to taste)
  • 1 can (400g) diced tomatoes
  • 1 cup coconut milk
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • Salt and pepper to taste
  • Fresh cilantro, chopped (for garnish)
  • Cooked rice or naan bread (for serving)

Instructions

  1. Heat a large skillet or frying pan over medium heat. Add the vegetable oil and allow it to heat up for about 1 minute.
  2. Prick the sausages with a fork in several places to help release some of the fat while cooking.
  3. Add the sausages to the hot oil and cook for about 8-10 minutes, turning occasionally, until browned on all sides. They do not need to be fully cooked through at this stage.
  4. Remove the sausages from the pan and set aside on a plate, leaving the drippings in the pan.
  5. In the same skillet, add the chopped onion and sauté for about 5 minutes until translucent and soft.
  6. Add the minced garlic and grated ginger, stirring well and cooking for an additional 1-2 minutes until fragrant.
  7. Add the curry powder, ground cumin, ground coriander, turmeric powder, and chili powder. Stir continuously for about 1 minute to toast the spices.
  8. Pour in the diced tomatoes, including the juice, and stir to combine, scraping any browned bits from the bottom of the pan.
  9. Allow the mixture to simmer for about 5 minutes.
  10. Add the coconut milk to the pan and stir well to create a creamy sauce.
  11. Add the soy sauce and brown sugar, stirring until the sugar is dissolved.
  12. Season the sauce with salt and pepper to taste.
  13. Return the browned sausages to the skillet, nestling them into the sauce.
  14. Bring the sauce to a gentle simmer, cover the skillet, and let it cook for about 15-20 minutes.
  15. Check the sausages for doneness; they should be cooked through and no longer pink in the center. If necessary, cook for an additional 5 minutes.
  16. Taste the sauce and adjust the seasoning if needed.
  17. Remove the skillet from the heat and let it sit for a couple of minutes to thicken slightly.
  18. Serve the curried sausages over cooked rice or alongside warm naan bread, garnished with fresh cilantro.
