Ingredients

Scale
  • 4 cups water
  • 4 Earl Grey tea bags (or 4 tablespoons loose leaf Earl Grey tea)
  • 1 cup dried tapioca pearls (black or clear)
  • 8 cups water (for boiling)
  • 1/2 cup brown sugar (or granulated sugar)
  • 1/4 cup water (for sugar syrup)
  • 2 cups milk (dairy or non-dairy, your preference! Oat milk is fantastic)
  • 1/2 cup heavy cream (optional, for extra richness)
  • Sweetener to taste (simple syrup, honey, agave, or sugar)
  • Ice cubes
  • Brown sugar syrup (for drizzling)
  • Whipped cream
  • Earl Grey tea powder (for extra flavor boost)

Instructions

  1. Boil 4 cups of water in a medium saucepan.
  2. Remove from heat and add Earl Grey tea bags (or loose leaf tea in an infuser). Steep for 5-7 minutes.
  3. Remove tea bags/infuser, squeezing gently.
  4. Cool the tea completely (refrigerate to speed up).
  5. Bring 8 cups of water to a vigorous boil in a large pot.
  6. Gently add the dried tapioca pearls.
  7. Stir gently and cook for the time specified on the package (usually 10-15 minutes), until they float.
  8. Turn off heat, cover, and simmer for another 10-15 minutes.
  9. Drain and rinse thoroughly with cold water.
  10. In a small saucepan, combine 1/2 cup brown sugar (or granulated sugar) and 1/4 cup water.
  11. Heat over medium heat, stirring constantly until sugar dissolves and syrup thickens slightly (3-5 minutes).
  12. Remove from heat and let cool slightly (it will thicken further).
  13. Prepare a tall glass.
  14. Spoon a generous amount of cooked boba into the bottom of the glass (about 1/4 to 1/3 full).
  15. Drizzle with brown sugar syrup (optional).
  16. Fill the glass with ice cubes.
  17. Pour in the cooled Earl Grey tea (about halfway).
  18. Add milk and heavy cream (if using) to fill the rest of the glass.
  19. Sweeten to taste.
  20. Stir well to combine.
  21. Add toppings (optional): whipped cream, Earl Grey tea powder.
  22. Serve immediately with a wide straw.

Notes

  • Adjust sweetness to your preference.
  • Experiment with different types of milk (oat, almond, soy, coconut).
  • Add flavored syrups for extra flavor.
  • Make it blended by combining all ingredients in a blender.
  • To make it vegan, use non-dairy milk and a vegan sweetener.
  • Bubble tea is best enjoyed immediately. Cooked boba can be stored in an airtight container in the refrigerator for up to 2 days. Reheat slightly in hot water before using. Brewed Earl Grey tea can be stored in the refrigerator for up to 3 days.
