  • 1 cup granulated sugar
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup milk
  • 2 teaspoons baking powder

  • Juice of 1 large orange (about ½ cup)
  • ½ teaspoon salt
  • 1 cup powdered sugar (for the drizzle)
  • 23 tablespoons orange juice (for the drizzle)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9-inch round cake pan with butter or non-stick spray, and optionally line the bottom with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a large mixing bowl, beat the softened butter and granulated sugar until light and fluffy (about 3-5 minutes).
  5. Add the eggs one at a time, mixing well after each addition. Then mix in the vanilla extract and orange zest.
  6. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Start and end with the dry ingredients, mixing until just combined.
  7. Fold in the fresh orange juice until the batter is smooth and slightly thick.
  8. Pour the batter into the prepared cake pan and spread it evenly.
  9. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  10. Let the cake cool in the pan for about 10 minutes, then turn it out onto a wire rack to cool completely.
  11. In a small bowl, whisk together the powdered sugar and 2-3 tablespoons of orange juice until smooth.
  12. Adjust the sweetness or acidity by adding more powdered sugar or orange juice as needed.
  13. Once the cake is cool, drizzle the orange glaze over the top, allowing it to run down the sides.
  14. Allow the drizzle to set for about 10-15 minutes before slicing.
  15. Slice the cake into wedges and serve.
