Easy Spring Rolls: A Simple Recipe for Fresh and Delicious Appetizers

These vibrant spring rolls are a refreshing blend of shrimp (or tofu), vermicelli noodles, crisp vegetables, and aromatic herbs, all wrapped in delicate rice paper. Ideal for a light meal or appetizer, they can be enjoyed fresh or fried, paired with tasty dipping sauces.

  • 1 package of rice paper wrappers (about 810 wrappers)
  • 1 cup of cooked shrimp, sliced in half lengthwise (or tofu for a vegetarian option)
  • 1 cup of vermicelli noodles, cooked according to package instructions
  • 1 cup of fresh lettuce leaves, torn into pieces
  • 1 cup of fresh herbs (such as mint, cilantro, and basil)
  • 1 cup of julienned vegetables (carrots, cucumbers, bell peppers, etc.)
  • 1 avocado, sliced (optional)
  • 1/4 cup of hoisin sauce (for dipping)
  • 1/4 cup of peanut sauce (for dipping)

Instructions

  1. Boil a pot of water, add the vermicelli noodles, and cook according to package instructions (about 3-5 minutes). Drain and rinse under cold water. Set aside.
  2. If using shrimp, ensure they are cooked and sliced in half lengthwise. For tofu, press to remove moisture, cut into thin strips, and pan-fry until golden brown. Set aside.
  3. Rinse lettuce leaves, herbs, and vegetables. Julienne carrots, cucumbers, and bell peppers. Slice avocado if using.
  4. Fill a shallow dish with warm water. Dip one rice paper wrapper for 10-15 seconds until soft and pliable. Avoid soaking too long to prevent stickiness.
  5. Place the softened wrapper on a clean, damp kitchen towel or cutting board.
  6. In the lower third of the wrapper, place a handful of vermicelli noodles, shrimp or tofu, lettuce, herbs, and julienned vegetables. Add avocado slices if desired.
  7. Fold the bottom of the wrapper over the filling, then fold in the sides, and roll tightly until reaching the top. Repeat with remaining wrappers and fillings.
  8. For crispy rolls, heat 1 inch of vegetable oil in a frying pan over medium heat. Fry spring rolls until golden brown, about 2-3 minutes. Drain on paper towels.
  9. Serve immediately with hoisin sauce and peanut sauce for dipping. If fried, let cool slightly before serving.
