Fettuccine Alfredo Sauce: The Ultimate Guide to Making Creamy Perfection

Indulge in a creamy Fettuccine Alfredo, featuring fresh ingredients and a velvety sauce that perfectly coats the pasta. This classic Italian dish is easy to prepare and will impress at any dinner table.

Ingredients

Scale
  • 1 pound fettuccine pasta
  • 1 cup unsalted butter (2 sticks)
  • 2 cups heavy cream
  • 2 cups freshly grated Parmesan cheese
  • 2 cloves garlic, minced
  • Salt, to taste
  • Freshly ground black pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions

  1. Fill a large pot with water, add about 1 tablespoon of salt, and bring to a rolling boil over high heat.
  2. Add the fettuccine pasta to the boiling water, stirring gently to prevent sticking. Cook according to package instructions (about 10-12 minutes) until al dente.
  3. Before draining, reserve about 1 cup of the pasta cooking water.
  4. Drain the fettuccine in a colander and set aside without rinsing.
  5. In a large skillet, melt the unsalted butter over medium heat, being careful not to let it brown.
  6. Add the minced garlic and sauté for 1-2 minutes until fragrant.
  7. Gradually add the heavy cream while stirring continuously. Bring to a gentle simmer without boiling.
  8. Slowly add the grated Parmesan cheese, stirring until melted and smooth (about 3-5 minutes).
  9. Taste and season with salt and freshly ground black pepper.
  10. If the sauce is too thick, add reserved pasta water a tablespoon at a time until desired consistency is reached.
  11. Add the drained fettuccine to the skillet with the Alfredo sauce and toss to coat evenly.
  12. Allow the pasta to heat through in the sauce for 1-2 minutes, stirring occasionally.
  13. If needed, add more reserved pasta water or Parmesan cheese for richness.
  14. Twirl the fettuccine onto plates or into bowls, ensuring a good amount of sauce with each serving.
  15. Sprinkle with chopped fresh parsley and extra grated Parmesan if desired.
  16. Serve immediately while hot and creamy, paired with a side salad or garlic bread.

Notes

  • Use fresh garlic and high-quality Parmesan for the best flavor.
  • Cook the fettuccine al dente, as it will continue to cook slightly when mixed with the sauce.
  • Customize with add-ins like cooked chicken, shrimp, or vegetables for added nutrition and flavor.
