Ingredients

Scale
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch cubes
  • 4 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup grated Parmesan cheese
  • 2 tablespoons fresh parsley, chopped (for garnish)
  • Wooden or metal skewers (if using wooden skewers, soak them in water for at least 30 minutes)

Instructions

  1. In a large mixing bowl, combine the olive oil, minced garlic, garlic powder, onion powder, dried oregano, dried thyme, salt, and black pepper. Whisk until well combined.
  2. Add the cubed chicken breasts to the bowl, ensuring each piece is well coated with the marinade. Use your hands for thorough mixing.
  3. Cover the bowl with plastic wrap or a lid and let the chicken marinate in the refrigerator for at least 30 minutes (2-4 hours for enhanced flavor).
  4. Preheat your grill or grill pan over medium-high heat. Ensure the grates are clean and lightly oiled.
  5. If using wooden skewers, soak them in water for at least 30 minutes to prevent burning.
  6. Assemble the skewers by threading the marinated chicken pieces onto them, leaving space between each piece for even cooking.
  7. Place the skewers on the preheated grill and cook for about 5-7 minutes on one side without moving them.
  8. Carefully flip the skewers using tongs and cook for an additional 5-7 minutes on the other side until the chicken reaches an internal temperature of 165°F (75°C).
  9. In the last minute of cooking, sprinkle the grated Parmesan cheese over the skewers to create a cheesy crust.
  10. Remove the chicken skewers from the grill and let them rest for a couple of minutes to retain moisture.
  11. Sprinkle the chopped fresh parsley over the skewers before serving.
  12. Serve warm, either on their own or with your favorite dipping sauce, alongside grilled vegetables, a fresh salad, or garlic bread.

Notes

  • For added flavor, consider including bell peppers, zucchini, or cherry tomatoes on the skewers.
  • For a spicy kick, add red pepper flakes to the marinade.
  • These skewers are great for meal prep; marinate the chicken up to 24 hours in advance.
