Ingredients

Scale
  • 4 cups of fresh grapes (red or green, your choice)
  • 1 cup of granulated sugar
  • 1 cup of water
  • 1 tablespoon of lemon juice
  • 1 teaspoon of vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Select and wash the grapes: Choose ripe, sweet grapes and rinse them thoroughly under cold water. Pat dry with a clean kitchen towel.
  2. Remove the stems: Detach the stems from the grapes using your hands or a small paring knife.
  3. Blend the grapes: Place the cleaned grapes in a blender or food processor and blend until smooth (about 30 seconds to 1 minute).
  4. Strain the mixture: Strain the blended grapes through a fine-mesh sieve or cheesecloth into a large bowl to remove skins and seeds.
  5. Combine sugar and water: In a small saucepan, combine 1 cup of granulated sugar and 1 cup of water over medium heat.
  6. Heat until dissolved: Stir occasionally until the sugar is completely dissolved (about 3-5 minutes). Remove from heat and let cool.
  7. Add lemon juice and vanilla: Once cooled, stir in 1 tablespoon of lemon juice and 1 teaspoon of vanilla extract (if using).
  8. Mix grape juice and syrup: Pour the cooled simple syrup into the bowl with the strained grape juice. Add a pinch of salt and stir until well combined.
  9. Taste and adjust: Taste the mixture and adjust sweetness or tartness by adding more lemon juice or sugar as needed.
  10. Chill the mixture: Chill the mixture in the refrigerator for 1-2 hours for even freezing.
  11. Transfer to ice cream maker: Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions (about 20-25 minutes).
  12. Transfer to freezer-safe container: Move the churned sorbet to a shallow freezer-safe container.
  13. Freeze until firm: Cover and freeze for at least 4 hours, or until firm enough to scoop.
  14. Scoop and serve: Let the sorbet sit at room temperature for 5-10 minutes before scooping. Serve in bowls or cones.
  15. Garnish (optional): Garnish with fresh mint leaves or whole grapes for an extra touch.

Notes

  • For a chunkier texture, blend the grapes for a shorter time.
