This Spinach, Grapefruit, and Avocado Salad combines fresh spinach, juicy grapefruit, creamy avocado, and crunchy walnuts, all drizzled with a tangy dressing. It’s a light and refreshing dish, perfect for lunch or as a side.

  • 1 large grapefruit, segmented

Instructions

  1. Wash the Spinach: Rinse the fresh spinach leaves under cold water and use a salad spinner to remove excess water.
  2. Segment the Grapefruit: Cut off the top and bottom of the grapefruit to create a flat surface. Stand it upright and slice off the peel and pith, then cut between the membranes to release the segments.
  3. Dice the Avocado: Halve the avocado, remove the pit, and scoop the flesh out. Slice it into cubes.
  4. Slice the Red Onion: Thinly slice the red onion. Soak in cold water for 10 minutes if the flavor is too strong.
  5. Chop the Walnuts: Roughly chop the walnuts. Toast in a dry skillet over medium heat for about 5 minutes if desired.
  6. Combine the Dressing Ingredients: In a small bowl, whisk together olive oil, apple cider vinegar, and honey (if using).
  7. Season the Dressing: Add salt and pepper to taste, adjusting as needed.
  8. Layer the Spinach: In a large salad bowl, place the washed spinach leaves as the base.
  9. Add the Grapefruit Segments: Scatter the grapefruit segments over the spinach.
  10. Incorporate the Avocado: Add the diced avocado in clusters.
  11. Sprinkle the Red Onion: Distribute the sliced red onion over the salad.
  12. Add Feta Cheese: Crumble feta cheese over the top.
  13. Top with Walnuts: Sprinkle chopped walnuts on top.
