  • 1/4 cup olive oil
  • 1/4 cup BBQ sauce (your favorite brand)
  • 2 tablespoons fresh lemon juice
  • 2 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 tablespoon fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a medium-sized mixing bowl, combine the olive oil, BBQ sauce, lemon juice, minced garlic, smoked paprika, cayenne pepper, salt, and black pepper. Whisk until well blended. Taste and adjust seasoning if necessary.
  2. Place the shrimp in a large resealable plastic bag or shallow dish. Pour the marinade over the shrimp, ensuring each piece is well coated. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 30 minutes, but no more than 2 hours.
  3. Preheat your grill to medium-high heat. For charcoal, ensure coals are hot and ashy. For gas, heat for about 10-15 minutes. Clean the grates with a grill brush.
  4. If using wooden skewers, soak them in water for about 30 minutes. Thread the marinated shrimp onto the skewers, leaving space between each shrimp.
  5. Place the skewered shrimp on the grill. Grill for about 2-3 minutes on one side until they start to turn pink and opaque. Flip carefully and grill for another 2-3 minutes on the other side.
  6. The shrimp are done when fully pink and opaque throughout, or when the internal temperature reaches 120°F (49°C). Remove from the grill and let rest for a minute.
  7. Transfer the grilled shrimp to a serving platter. Drizzle with extra BBQ sauce if desired, and sprinkle with fresh parsley. Serve with lemon wedges on the side.
