This comforting one-pot ground beef and potato skillet dish is perfect for busy weeknights. With flavorful sautéed onions, garlic, and a blend of seasonings, it’s a satisfying meal that the whole family will enjoy.

  • 4 medium-sized potatoes, peeled and diced
  • 1 medium onion, finely chopped

  • 1 cup beef broth
  • 1 tablespoon Worcestershire sauce

  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 tablespoons olive oil
  • 1 cup frozen peas (optional)
  • Fresh parsley for garnish (optional)

Instructions

  1. Gather all your ingredients. Peel and dice the potatoes into 1-inch cubes and place them in a bowl of cold water. Finely chop the onion and mince the garlic. Measure out the frozen peas if using.
  2. In a large skillet, heat 2 tablespoons of olive oil over medium heat. Add the chopped onion and sauté for 3-4 minutes until translucent. Add the minced garlic and cook for an additional 1-2 minutes.
  3. Add the ground beef to the skillet, breaking it up with a spatula. Cook until browned and no longer pink, about 5-7 minutes. Drain any excess fat.
  4. Return the skillet to heat and add Worcestershire sauce, dried thyme, paprika, salt, and pepper. Stir to combine. Pour in the beef broth, scraping the bottom of the skillet to release browned bits. Bring to a gentle simmer.
  5. Drain the diced potatoes and add them to the skillet, stirring to combine. Cover and let simmer for 15-20 minutes, stirring occasionally, until the potatoes are tender.
  6. Once the potatoes are tender, add the frozen peas and cook for an additional 5 minutes. Taste and adjust seasoning if necessary. Garnish with freshly chopped parsley if desired.
  7. Serve hot from the skillet, ideally with crusty bread on the side. Store leftovers in an airtight container in the refrigerator. Reheat in a skillet over medium heat, adding a splash of beef broth if needed.
