Ingredients

Scale
  • 2 pounds baby potatoes, halved
  • 6 slices of bacon, chopped
  • 1/4 cup honey
  • 3 tablespoons olive oil
  • 2 teaspoons garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the baby potatoes thoroughly under cold water and cut them in half. Quarter any larger potatoes for even cooking.
  3. In a large skillet over medium heat, cook the chopped bacon until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate, leaving 1 tablespoon of bacon fat in the skillet.
  4. In a small bowl, whisk together honey, olive oil, garlic powder, onion powder, smoked paprika, salt, and pepper until well combined.
  5. In a large mixing bowl, toss the halved potatoes with the honey mixture until evenly coated. Gently fold in the crispy bacon.
  6. Line a large baking sheet with parchment paper and spread the potato and bacon mixture in a single layer.
  7. Roast in the preheated oven for 25-30 minutes, stirring halfway through. Check for golden brown and crispy texture, adding an extra 5 minutes if needed.
  8. Remove from the oven and let cool for a few minutes. Sprinkle with freshly chopped parsley before serving.

Notes

  • For added flavor, consider topping with crumbled feta or goat cheese, or a drizzle of balsamic glaze.
  • For a spicy kick, add a pinch of red pepper flakes to the honey mixture.
  • Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven for best results.
