Honey Ginger Lemonade: The Ultimate Refreshing Recipe

  • 1 cup fresh lemon juice (about 68 lemons, depending on size)
  • 1 cup honey (preferably raw and local)
  • 4 cups water (filtered is best)
  • 2-inch piece of fresh ginger, peeled and thinly sliced
  • Lemon slices, for garnish (optional)
  • Fresh mint sprigs, for garnish (optional)
  • Ice cubes

Instructions

  1. Combine honey and ginger in a small saucepan. Ensure ginger is submerged as much as possible.
  2. Heat gently over low heat, warming the honey but not boiling it.
  3. Simmer gently for 15-20 minutes, stirring occasionally, allowing the ginger to infuse the honey.
  4. Remove from heat and let cool slightly. Strain the syrup through a fine-mesh sieve into a heat-proof container to remove ginger slices. Discard ginger slices (or save for tea).
  5. Taste and adjust for ginger strength by simmering longer for a stronger flavor or adding plain honey to mellow it out.
  6. Juice the lemons to yield 1 cup of fresh lemon juice. Remove any seeds.
  7. In a large pitcher, combine the fresh lemon juice, ginger honey syrup, and water.
  8. Stir thoroughly until the honey is completely dissolved.
  9. Taste and adjust the sweetness and tartness as needed. Add more ginger honey syrup if too tart, or more lemon juice if too sweet.
  10. Cover and refrigerate for at least 30 minutes to chill and allow flavors to meld.
  11. Fill glasses with ice cubes.
  12. Pour the chilled lemonade into the prepared glasses.
  13. Garnish each glass with a slice of lemon and a sprig of fresh mint (optional).
  14. Serve immediately.
