1 cup heavy cream
1 cup granulated sugar
1 cup white chocolate chips (high quality, such as Ghirardelli or Lindt)
1 teaspoon vanilla extract
Pinch of salt
2 shots of espresso (about 2 ounces), freshly brewed
Alternatively, 1/2 cup strong brewed coffee
2 cups ice cubes
1 cup milk (dairy or non-dairy, your preference)
Whipped cream (optional, for topping)
White chocolate shavings or syrup (optional, for garnish)
Instructions
In a medium saucepan, combine the heavy cream and granulated sugar. Place the saucepan over medium heat.
Stir the mixture constantly until the sugar is completely dissolved. You’ll know it’s ready when the mixture is smooth and there are no sugar granules visible on the bottom or sides of the pan. This usually takes about 3-5 minutes.
Reduce the heat to low. Add the white chocolate chips to the saucepan.
Continue stirring constantly until the white chocolate chips are completely melted and the sauce is smooth and glossy. Be patient and don’t increase the heat, as white chocolate can burn easily. This might take another 3-5 minutes. If you notice any clumps, remove the pan from the heat and continue stirring vigorously until smooth.
Remove the saucepan from the heat. Stir in the vanilla extract and a pinch of salt. The salt helps to balance the sweetness of the white chocolate.
Allow the white chocolate sauce to cool slightly before using. It will thicken as it cools. You can use it immediately, or store it in an airtight container in the refrigerator for up to 2 weeks. If refrigerated, the sauce will thicken considerably. You can gently reheat it in the microwave or on the stovetop before using.
If you have an espresso machine, brew two shots of espresso (about 2 ounces). Aim for a rich, dark espresso for the best flavor.
If you’re using coffee, brew a half cup of very strong coffee. Use a dark roast coffee and a higher coffee-to-water ratio than you normally would to achieve a similar intensity to espresso. You can use a French press, pour-over, or drip coffee maker.
Allow the espresso or coffee to cool slightly before assembling the mocha. This will prevent the ice from melting too quickly.
Pour 2-3 tablespoons of the white chocolate sauce into a tall glass. You can adjust the amount depending on how sweet you like your mocha.
Pour the cooled espresso (or strong coffee) over the white chocolate sauce.
Fill the glass with ice cubes.
Pour milk over the ice, leaving about an inch of space at the top of the glass.
