  • 1 pound Italian sausage (mild or spicy)
  • 2 tablespoons olive oil
  • 1 large onion, sliced (yellow or red)
  • 2 bell peppers, sliced (any color or a mix of colors)
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • 1/2 cup chicken or vegetable broth (optional)
  • Fresh parsley, chopped (for garnish)
  • Crusty bread or hoagie rolls (for serving)

Instructions

  1. Heat a large skillet over medium heat. Add the Italian sausage links and cook for about 5-7 minutes, turning occasionally, until browned on all sides. Remove from skillet and set aside.
  2. In the same skillet, add olive oil. If there’s excess grease from the sausage, drain some but leave a little for flavor.
  3. Add sliced onions to the skillet and sauté for 3-4 minutes until softened and translucent.
  4. Add sliced bell peppers and cook for another 5-7 minutes until tender and slightly caramelized.
  5. Stir in minced garlic and cook for an additional minute, stirring frequently.
  6. Sprinkle in dried oregano, dried basil, and red pepper flakes (if using). Stir to coat the vegetables evenly.
  7. Season with salt and pepper to taste.
  8. Return the browned sausages to the skillet, nestling them among the vegetables. Pour in chicken or vegetable broth if desired.
  9. Cover the skillet and let simmer for 10-15 minutes until sausages are cooked through (internal temperature of 160°F/70°C).
  10. Remove the lid, stir, and adjust seasoning if necessary. For a thicker sauce, simmer uncovered for an additional 5 minutes.
  11. Serve the sausage and pepper mixture on a plate or in a hoagie roll, garnished with freshly chopped parsley.
