  • 3 cloves garlic, minced

  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 cup fresh cilantro, chopped (optional for garnish)
  • Juice of 1 lime
  • 1/4 cup chicken broth

Instructions

  1. Rinse the chicken breasts under cold water and pat them dry with paper towels.
  2. In a small bowl, mix together smoked paprika, ground cumin, salt, and black pepper.
  3. Rub the spice mixture evenly over both sides of each chicken breast.
  4. Heat olive oil in a large skillet over medium-high heat. Once hot, add the seasoned chicken breasts and sear for 5-6 minutes on each side until golden brown and cooked through. Check for doneness by cutting into the thickest part; it should be white and juices should run clear.
  5. Remove the chicken from the skillet and cover with aluminum foil to keep warm.
  6. In the same skillet, add chopped onion and jalapeño peppers. Sauté for 3-4 minutes until onions are translucent and jalapeños soften.
  7. Add minced garlic and sauté for an additional 1-2 minutes, stirring frequently.
  8. Stir in diced peaches and cook for 3-4 minutes until they start to break down.
  9. Pour in chicken broth and lime juice, stirring to combine. Let simmer for 5-7 minutes, adjusting consistency with more broth if needed.
  10. Taste and adjust seasoning, adding more jalapeño or cayenne pepper for extra heat if desired.
  11. Return the seared chicken breasts to the skillet and spoon the sauce over them.
  12. Reduce heat to low, cover, and let simmer for 5 minutes to absorb flavors.
  13. If using, sprinkle cilantro over the chicken just before serving.
  14. Serve each chicken breast on a plate with jalapeño peach sauce generously spooned over the top.
