Kiwi Starfruit Refresher: A Tropical Taste of Summer

A refreshing and vibrant Kiwi Starfruit Refresher, combining tangy kiwi puree with a sweet and tart starfruit syrup, topped with sparkling water for a delightful non-alcoholic beverage.

Ingredients

  • 4 ripe kiwis, peeled and roughly chopped
  • 2 tablespoons water (more if needed for desired consistency)
  • 1 tablespoon lime juice
  • 1 tablespoon simple syrup (or honey, agave nectar to taste)
  • 2 ripe starfruits, sliced
  • 1/2 cup granulated sugar
  • 1/2 cup water
  • 1 teaspoon lemon juice
  • Ice cubes
  • Sparkling water or club soda
  • Kiwi slices, for garnish
  • Starfruit slices, for garnish
  • Lime wedges, for garnish (optional)

Instructions

  1. Place peeled and chopped kiwis in a blender or food processor.
  2. Add 2 tablespoons of water (add more, 1 tablespoon at a time, if needed for a smooth consistency).
  3. Add 1 tablespoon of lime juice.
  4. Add 1 tablespoon of simple syrup (or honey/agave to taste).
  5. Blend until completely smooth.
  6. Taste and adjust sweetness/tartness as needed.
  7. Set aside (can be stored in the refrigerator for up to 3 days).
  8. Slice the starfruits, removing any seeds.
  9. In a small saucepan, combine sliced starfruit, sugar, and water.
  10. Bring to a boil over medium heat, stirring until sugar dissolves.
  11. Reduce heat to low and simmer for 10-15 minutes, or until starfruit is soft and syrup has thickened slightly.
  12. Remove from heat and stir in lemon juice.
  13. Let cool completely (it will thicken further).
  14. Strain through a fine-mesh sieve to remove pulp.
  15. Store in an airtight container in the refrigerator for up to 2 weeks.
  16. Fill a glass with ice cubes.
  17. Pour 2-3 tablespoons of kiwi puree into the glass.
  18. Add 1-2 tablespoons of starfruit syrup.
  19. Top with sparkling water or club soda.
  20. Gently stir to combine.
  21. Garnish with kiwi slices, starfruit slices, and lime wedges (optional).
  22. Taste and adjust sweetness/tartness as needed.
  23. Serve immediately.

Notes

  • Adjusting Sweetness: Adjust simple syrup and sugar to taste. Use sugar substitutes if desired.
  • Using Different Fruits: Experiment with mango, pineapple, or passion fruit.
  • Making it a Cocktail: Add a shot of vodka, gin, or white rum.
