Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon lemon zest (from about 2 lemons)
  • 2 tablespoons fresh lemon juice (from about 1 lemon)
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes (optional, for a bit of heat)
  • Fresh parsley, chopped (for garnish)
  • Lemon wedges (for serving)

Instructions

  1. In a medium-sized bowl, combine olive oil, salt, black pepper, lemon zest, lemon juice, minced garlic, oregano, thyme, and red pepper flakes (if using). Whisk until well combined.
  2. Place chicken breasts in a large resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish with plastic wrap.
  3. Refrigerate the chicken for at least 30 minutes (2-4 hours for enhanced flavor, or even 15 minutes if short on time).
  4. Preheat your oven to 400°F (200°C).
  5. After marinating, remove chicken from the refrigerator and let it sit at room temperature for about 10 minutes.
  6. Heat a large oven-safe skillet over medium-high heat and add a drizzle of olive oil. Once hot, carefully place the marinated chicken breasts in the skillet. Sear for about 4-5 minutes on each side until golden brown.
  7. Transfer the skillet to the preheated oven and bake for 15-20 minutes, or until the internal temperature reaches 165°F (75°C).
  8. Remove the skillet from the oven and let the chicken rest for about 5 minutes.
  9. Slice the chicken into strips or serve whole on a platter. Drizzle any remaining juices from the skillet over the chicken.
  10. Garnish with freshly chopped parsley and serve with lemon wedges on the side.
